Curry Quinoa

Quinoa (pronounced “keen-wa”) is my staple grain.  It’s rich in protein and quick to cook, so I recommend eating it often.  It’s a great side dish instead of rice or pasta.

 Ingredients:

1 cup quinoa, rinsed

2 cups water

1 teaspoon Bragg Liquid Amino (optional)

1 teaspoon extra virgin olive oil

1 teaspoon curry powder

Place the quinoa and water in a medium sauce pan and bring to a boil. Reduce heat, add the rest of the ingredients, cover, and simmer for 15-20 minutes, until the water is completely absorbed. Makes 4 servings.
