The Physicians Committee for Responsible Medicine is presenting a free 21-day Vegan Kickstart online program beginning January 1st. If you’ve been wanting to give vegan foods a try in the new year, this is a great way to start.

I’m interested in trying a vegan diet for 30 days because I never eat pork or beef and seldomly eat chicken and turkey.

Thank you for sharing this information. Oh my- this 21 day Vegan kickstart is right on time too. I planned to go meatless in January. I am actually getting a jumpstart today and cooking a pot of kale vegetable soup right now. I have never eaten Kale in life, so this should be interesting. I am going to give this my best shot. Althought I know the benefits of eating a plant-based diet, it has been HARD! What makes it more difficult is my habit of years from planning my meals around meat. The past 10 meatless days of planning my meals around vegetables has been an eyeopener. This experience is fast becoming the most intense cooking experiment of my life. I am baking an eggplant lasagna tonight and the aroma is yummy. Well, just wanted to let you know I am still at it. ….and loving the results so far too. Flat belly come on…..

I know the vegan challenge is over, but I am still going meatless until the end of January. I’ll see how I feel and decide what to do. I did my best and glad I tested out some vegan dishes this month. Although I had some dairy, I ate lots less than usual. I I sure like the simple cooking with lots of fresh veggies and spices, especially the garlic. I liked that my grocery shopping was faster too. I went in the store and skipped many aisles and stayed in the produce and grain areas. Thanks for posting a super challenge.
