Fresh Peach Cobbler Recipe

I just made a fresh peach cobbler and it is scrumptious!  So, of course I’m going to share the recipe with you.  It took me all of 15 minutes to prepare because there’s no oven needed.  It’s my take on a dessert from one of my favorite raw food books: Raw Food Made Easy for 1 or 2 People by Jennifer Cornbleet.  Ripe peaches, crumb topping–it’s a perfect treat for the holiday weekend.  Add some nondairy vanilla ice cream and feel the love! 

Crumb Topping:

2 cups pecans

1/2 cup unsweetened dried shredded coconut

1 tsp fresh lime juice

1/4 tsp cinnamin

8 pitted medjool dates

Filling

5 ripe peaches

1/2 tsp fresh lime juice

1/2 tsp agave nectar

Put all crumb topping ingredients in food processer with the ”S” blade and process until crumbly (do not overprocess).  Next, peel and thinly chop only 4 of the 5 peaches.  Spread chopped peaches on bottom of glass pie plate.  Peel and halve remaining peach and place in food processor with lime juice and agave nectar.  Process until smooth.  (Add more lime juice or agave nectar to taste, if desired).  Stir this  mixture with chopped peaches in pie plate.  Next, use a spoon to sprinkle crumb topping over peaches.  Voila!

The peace cobbler is ALL THAT!! I made it two weeks in a row. Took the first one to my office and had everyone try it. They loved it! Shared the recipe; others made it, too. My only regret is that I did not have the recipe earlier in the summer. I found juice-drippin’ sweet peaches this year; perfect for a no-cook cobbler. You GO, Ms. Tracye! Thanks for sharing!

I have been looking for a crumb topping that uses natural sweeteners and preferably not an butter. I came across this recipe and am intrigued. My only problem is that I have a tree nut allergy and I can’t eat the pecans. Do you have a suggestion on a way to replace the pecans? The coconut is fine, that’s in a different family and I can eat that. Thanks!

Almonds, walnuts or macadamias work fine, too. But if you can’t do those, I’d suggest using rolled oats instead of nuts. Hope this is helpful!
